Stuffed Zucchini
Ingredients:
- 4 medium zucchini
- 2 tablespoons cooking oil
- 1 small onion, minced
- 2 eggs, lighlty beaten
- 1/2 cup dry bread crumbs
- 1/4 cup grated parmesan cheese
- 2 tablespoons minced parsley
- salt and pepper to taste
Directions:
1. Cut zucchini in half lengthwise and scoop out pulp leaving a 3/8 inch
shell.
2. Boil shells in salted water for 2 minutes, remove, drain and set
aside.
3. Chop zucchini pulp.
4. In a skillet, heat oil over medium heat
and saute onion and zucchini pulp until tender.
5. Remove from heat and
combine remaining ingredients
6. Fill shells and place on a greased baking
dish.
7. Bake at 350 for 15-20 minutes, or until heated through.

servings.
